Pinchos
Skewered food made for an easy, flavorful festival order.
The skewer is the starting point
A pincho is food served on a skewer. Puerto Rican versions often feature seasoned meat cooked on a grill, with chicken and pork among familiar choices. The vendor’s menu determines the protein, seasoning, sauce, and any bread served with it. The name alone does not specify a single recipe.
Make the order your own
Ask which protein is available and whether the sauce is applied during cooking or added afterward. A sweet glaze and a garlic-forward marinade create different experiences. If you want sauce on the side, ask before the order reaches the grill or finishing station.
Check whether the price is for one skewer or a plate with sides. For a fuller meal, combine a pincho with rice or another side; for a tasting route, a skewer may be one stop between a fritura and a cold treat.
Eating a pincho comfortably
The exposed skewer can be sharp, so use a plate when sharing or helping a child eat. Slide pieces off rather than passing the pointed end through a crowd. A handheld dish is convenient, but it still deserves a place to pause and enjoy it.
Ask about marinades and sauces if you avoid particular ingredients. Bread, prepared sauces, and seasonings may introduce ingredients that are not obvious from the grilled meat. Consult the food vendor page for announced festival offerings.
